Description
Role Overview We are looking for a Head Chef with a mastery of South Indian cuisine to lead our kitchen operations. The primary focus is the execution of a high-quality, high-volume daily breakfast buffet, alongside managing occasional dinner services. You will be responsible for consistency in traditional flavors, efficient station management, and leading a disciplined morning team. Key Responsibilities
- Buffet Management: Oversee the full execution of the South Indian breakfast buffet, ensuring all live stations (Dosa, Appam, etc.) and buffet counters are consistently stocked, fresh, and visually appealing.
- Menu Engineering: Maintain a rotating menu of regional specialties—focusing on authentic batters, sambars, chutneys, and grain-based dishes—while planning curated menus for occasional dinner events.
- Operational Efficiency: Manage early-morning kitchen prep cycles and staff rosters to ensure 100% readiness before service begins.
- Quality & Consistency: Rigorously monitor taste profiles and food temperatures throughout the buffet duration.
- Inventory & Hygiene: Handle procurement for fresh produce and dry stores, ensuring minimal wastage and strict compliance with food safety and sanitation standards. Required Skills & Experience
- Cuisine Expertise: Deep technical knowledge of South Indian breakfast staples, fermentation techniques, and traditional spice grinding.
- Buffet Experience: Proven experience managing buffet-style service, including portion control and presentation for large groups.
- Leadership: Ability to lead a team during high-pressure morning peaks and adapt to the different pacing of occasional dinner services.
- Experience: 5+ years in professional kitchens, with a explicit track record in South Indian specialty restaurants or premium hotel breakfast operations. Working Conditions
- Primarily morning-shift focused (early starts for breakfast prep).
- Flexibility to manage full-service dinner setups as required by the event calendar. Pay: ₹25,000.00
