- Senior About the Role We are looking for an energetic, detail-oriented Quality Engineer with 2-3 years of hands-on experience in a flour mill or food manufacturing environment. In this role, you will safeguard the quality, consistency, and safety of MillD atta across every batch
- from incoming raw materials and protein fractions through milling, blending, and finished product. You will own quality documentation and systems, drive quality control and testing, support new product development, and maintain the integrity of our recipes, blend ratios, and formulations. You will work closely with production, R&D;, sourcing, and external NABL labs to ensure each pack meets our protein, nutrition, taste, and food-safety promises. Because our product contains wheat (gluten), soy, and peanuts, rigorous allergen control and accurate labelling are central to the role. Key Responsibilities Quality Control & Testing
• Perform and oversee quality testing on incoming raw materials (wheat/grain), protein fractions (wheat, soy, peanut), in-process samples, and finished atta
- including moisture, ash, protein content, gluten, granulation/particle size, fat, and sensory attributes.
- Verify protein content and nutritional claims (46 g/100 g, low GI), coordinate batch-wise testing with NABL-accredited laboratories, and reconcile lab results against specifications.
- Monitor milling, fractionation, and blending parameters to ensure each batch conforms to internal specs and label claims.
- Identify, document, and investigate non-conformities; raise corrective and preventive actions (CAPA) and drive them to closure.
- Calibrate and maintain laboratory and quality testing equipment. Documentation & Compliance
• Maintain accurate, audit-ready quality records: batch documentation, test logs, certificates of analysis (COA), and NABL test reports.
- Develop, update, and control SOPs, work instructions, and quality manuals for milling, fractionation, blending, and packing.
- Support food safety and quality management systems
- FSSAI, HACCP, GMP, and ISO 22000 / FSSC 22000
- and ensure audit readiness for internal, customer, and regulatory audits.
- Maintain allergen control documentation and ensure correct allergen and nutrition labelling for wheat (gluten), soy, and peanuts.
- Support transparency commitments by keeping lab reports and product data accurate and publication-ready. New Product Development (NPD)
• Support new product and variant development from concept and trial through to commercial launch.
- Conduct product trials, document results, and evaluate protein, nutrition, dough handling, texture, and taste against targets.
- Collaborate with R&D;, production, and marketing to translate nutrition and customer requirements into repeatable, compliant products. Recipe, Blend & Formulation Management
• Maintain, control, and update recipes, blend ratios, and formulations (e.g., 60% wheat / 30% soy / 10% peanut) with strict version control.
- Ensure batch-to-batch consistency of blends and protein levels, and document all approved formulation or process changes.
- Partner with production to fine-tune blends, milling, and fractionation settings to hit target protein, GI, and texture specifications. Continuous Improvement & Collaboration
• Drive continuous improvement to reduce waste, rework, and quality deviations while protecting product claims.
- Train and guide production and shop-floor staff on quality, hygiene, and allergen practices.
- Coordinate cross-functionally to resolve quality issues quickly and prevent recurrence. Required Qualifications & Experience
• Bachelor's degree or diploma in Food Technology, Food Science, Milling Technology, Chemical/Industrial Engineering, or a related field.
- 1-4 years of relevant experience in quality control, documentation, and new product development in a flour mill or food manufacturing environment.
- Working knowledge of milling processes and flour quality parameters (moisture, ash, protein, gluten, granulation).
- Familiarity with food-safety standards and systems (FSSAI, HACCP, GMP, ISO 22000 / FSSC 22000) and with NABL-lab testing workflows.
- Experience maintaining recipes, blends, and quality documentation; awareness of allergen management (wheat/soy/peanut) is a strong plus.
- Proficiency in MS Office (Excel, Word) and quality/record-keeping software. Skills & Personal Attributes
