Core Responsibilities1. Culinary Leadership & Menu Innovation
- Authentic Recipe Execution: Maintain the highest standards of authenticity for traditional dishes (e.g., Mezze, Slow-roasted meats, Mandi/Kabsa, Mashawi, and intricate Arabic desserts).
- Menu Development: Design and curate seasonal menus, daily specials, and high-end banquet menus that blend traditional flavors with contemporary plating.
- Sourcing & Ingredients: Oversee the sourcing of specialized, high-quality Arabic spices, halal meats, and fresh produce, maintaining strong relationships with specialty vendors. 2. Kitchen Operations & Management
- Team Leadership: Recruit, train, mentor, and supervise all kitchen staff (Sous Chefs, Line Cooks, Stewards), fostering a culture of respect, passion, and efficiency.
- Quality Control: Ensure every dish leaving the kitchen meets exact standards for taste, temperature, portion size, and visual appeal.
- Inventory & Waste: Manage food stock, minimize waste through smart portion control, and conduct regular inventory audits. 3. Financial & Business Acumen
- Food Costing: Manage the kitchen budget, calculating accurate food costs to maximize profitability without compromising on ingredient quality.
- Labor Optimization: Design efficient kitchen shift schedules that align with peak hours, events, and labor budgets. 4. Hygiene, Safety & Compliance
- HACCP & Health Codes: Ensure strict adherence to local health department regulations, food safety standards, and sanitation protocols.
- Halal Compliance: Guarantee 100% adherence to Halal food preparation, storage, and cross-contamination prevention guidelines. Pay: ₹50,000.00
