Production Manager (Thikri)

Role Overview We are looking for a results-driven and experienced Production Manager to oversee daily operations at our wheat processing (aata) plant. The ideal candidate will have hands-on experience in flour milling or grain processing, a strong understanding of production workflows, and the ability to lead a team while ensuring quality, efficiency, and compliance with food safety standards. - Plan, schedule, and oversee daily wheat milling and aata production to meet output targets
- Monitor machine operations including cleaning, conditioning, milling, and sifting units
- Coordinate raw material (wheat) intake, storage, and feed into the milling process
- Ensure consistent flour yield, extraction rates, and product specifications are met
- Identify production bottlenecks and implement process improvements Quality & Compliance
- Maintain quality standards as per BIS, FSSAI, or company-specific norms
- Oversee sampling, testing, and documentation of finished product (atta, maida, suji, bran, etc.)
- Ensure adherence to food safety, hygiene, and sanitation protocols across the plant
- Coordinate with the QC team to resolve product quality deviations Team & Resource Management
- Lead and manage a team of machine operators, supervisors, and floor workers
- Conduct daily shift briefings, monitor attendance, and assign tasks efficiently
- Train plant staff on equipment operation, safety procedures, and SOPs
- Manage shift scheduling to ensure uninterrupted 24/7 or multi-shift operations Maintenance & Safety
- Coordinate preventive and breakdown maintenance with the engineering team
- Ensure all machinery (roller mills, purifiers, plansifters, bran finishers) is maintained and calibrated
- Enforce plant safety, fire safety, and dust explosion prevention protocols
- Maintain a secure working environment in compliance with occupational health standards Reporting & Documentation
- Prepare and submit daily/weekly/monthly production reports to management
- Track key metrics: throughput (TPD), yield, energy consumption, wastage, downtime
- Maintain logs for raw material consumption, finished goods output, and machine performance Required Qualifications & Skills Education
- B.Tech / Diploma in Food Technology, Mechanical Engineering, or related discipline (Preffered but not necessary) We are looking for right experience and expertise over educational qualifications Experience
- 1-4 years of hands-on experience in a wheat flour milling / atta processing plant
- Prior experience in managing production shifts or leading a plant floor team
- Familiarity with roller mill flow diagrams, extraction rate optimization, and moisture control Technical Knowledge
- Sound understanding of the wheat milling process: cleaning, conditioning, milling, grading, packing
- Knowledge of milling machinery: roller mills, plansifters, purifiers, impact detachers, bran finishers
- Awareness of FSSAI regulations and food-grade manufacturing standards
- Basic understanding of ERP/production tracking systems is advantageous What We Offer
