Job Title: Commi 1st (Chinese Cuisine)
Job Location: Fragrant Nature Kollam Reports To: Chef de Partie, Sous Chef, Executive Chef
Job Summary: The Commi 1st (Chinese) is responsible for preparing and cooking advanced Chinese dishes, overseeing food preparation, ensuring quality control, and maintaining kitchen organization and cleanliness. This position demands a high level of culinary knowledge and expertise in Chinese cuisine and is integral to the smooth operation of the kitchen.
Key Responsibilities:
Food Preparation & Cooking: Prepare and cook Chinese dishes such as stir-fries, steamed dishes, braised dishes, and other specialty items, ensuring they meet the restaurant's standards for taste, presentation, and quality. Master and execute complex Chinese cooking techniques such as wok cooking, deep-frying, steaming, braising, and roasting. Oversee the preparation of broths, stocks, sauces, and marinades used in Chinese dishes.
Supervision & Training: Supervise junior kitchen staff (Commi 2nd and Commi 3rd) and guide them in their daily tasks. Assist in the training of new kitchen staff on Chinese cooking techniques and kitchen operations.
Kitchen Management:
Ensure the proper handling, storage, and preparation of ingredients to maintain freshness and quality. Assist in inventory control and stock management, including ordering ingredients as needed. Maintain cleanliness and organization of workstations, kitchen equipment, and storage areas to meet hygiene and safety standards.
Quality Control & Presentation:
Ensure all dishes leaving the kitchen meet the standards of taste, quality, and presentation. Monitor portion control to minimize waste and ensure consistency. Work closely with the Chef de Partie and Sous Chef to create current dishes, refine recipes, or suggest improvements.
Workplace Safety:
Adhere to food safety regulations, ensuring the kitchen is compliant with health and safety standards. Ensure all kitchen tools and equipment are cleaned and maintained according to the standards.
